BrekkieBowl…for the hungry! Some mornings I wake up feeling like I haven’t eaten in DAYS. Why? You’ve got me – but it sure makes it easy to think up a tasty & totally satisfying solution.┬áThis bowl is practically spilling over with RoastedPotatoes, Avocado, GreenOnions, a FriedEgg, & my version of plant based ‘Hollandaise’ – or so I call it. There’s SO much goodness in this bowl you’ll have to check out the recipe below for all the deets. And yes, I do loove my lemon zest and put it on just about everything. This one should keep you going until lunch!…another favourite time of day.

Hollandaise *PlantBased
1/3cup water
1cup raw cashews, soak in water for at least 2hrs & then drain
1tsp grape seed oil
2tbsp fresh lemon juice
1/4tsp dry mustard (1/2tsp if you like it mustardy – I do:)
1/2tsp sea salt
1/8tsp white pepper
1/4tsp turmeric powder
Add above ingredients into a high speed blender and blend until smooth. Poor into an air tight container and store in the fridge. Should be good for about one week. If heating up, simply add to a pot or saucepan over med/low heat – stirring often.

RoastedPotatoes
2 large russet potatoes, washed & roughly chopped
1-2tbsp grape seed oil
2tbsp fresh lemon juice *keep the zest
Pinch of sea salt
Preheat oven to 400*F. Add the above ingredients to a bowl and toss until coated. Spread out coated potatoes onto a baking sheet spacing the pieces apart. Bake for approximately 35-40mins or until golden brown – flip at the 20min mark.

FriedEgg(s)
I added a little ground cumin, sea salt, and pepper to mine sprinkling lemon zest and green onions on top.
