CarrotTurmeric Raw-ly Bars

This one is for the BARS!…see previous energy balls post. I’m SUPER excited to present Carrot/Turmeric Raw-ly Bars!!! It’s a *brand new recipe of mine packing antioxidants, minerals, Omega-3, protein, beta carotene, & B-vitamins…a metabolism booster👊 This not-too-sweet/grab&go bar is perfect for those busy days, outdoor ventures, or even sharing with co-workers👉my taste test squad. With all the dehydrating I’ve been featuring (1 week new to Instagram), wouldn’t it be SO cool if @excaliburdehydrator would collaborate with me on a contest for you folks…SO much love for my Excalibur Dehydrator❤ *A quick note on dehydrating carrots…blanch them after slicing (before dehydrating) to help preserve the beta carotene. *If carrot powder is just not your thing, no problem! Substitute the carrot/turmeric/arrowroot powder for 4-6tbsp of cocoa powder for a rich chocolatey bar.

CarrotTurmeric Raw-ly Bars
3/4cup raw cashew butter
1/2cup coconut oil, melted
2-3tbsp carrot powder (about 1to2 Nantes carrots dehydrated & ground)
2tsp turmeric powder
1/4tsp pure vanilla extract
1/4tsp sea salt
20 pitted medjool dates
2tbsp arrowroot powder *a must in the pantry @bobsredmill; available in the health food isle of most grocery stores *combine above ingredients in a food processor & blend until runs smooth (older dates = more grainy result, which is not a bad thing:) Once blended, fold in 3/4cup chopped raw walnuts & 2-3tbsp chia seeds. Line a loaf pan with parchment paper and drop in bar mixture. Flatten and smooth the top with a spatula. Sprinkle with carrot & turmeric powder and allow to set in the freezer or fridge. Once set, remove from the fridge/freezer, lift from loaf pan, & cut into desired pieces. Best stored in the fridge/freezer.
