Happy 1st Day of Spring!!…woot! I thought a blooming (?…possibly poor word choice) breakfast was in order – sautéed HoneyLemon Glazed Pear with MapleCinnamon Ricotta on CampingToast🙌 There’s just something about this photo that says to me: eat me please!…but where to start?! It was just SO sweet looking (and also packing protein, calcium, zinc, vitamins A&B). After one bite though, my pupils dilated and I was ALL over it like white on rice – nom,nom. AND the CampingToast seems to bring the flavours together – however, that’s not to say I didn’t lick the ricotta spread bowl clean✨ .
CampingToast: fresh slice of bread toasted over campfire/open flame.
MapleCinnamon Ricotta Spread
1/3cup ricotta cheese
1/2tsp ground cinnamon
1-1&1/2tsp maple syrup
1/2tsp fresh lemon juice
*combine in bowl and use a hand blender (or standing high speed blender) to whip until smooth.
HoneyLemon Glazed Pear
1tbsp raw honey
2tsp fresh lemon juice
*combine in bowl & stir well. Add 1 pear, thinly sliced, and gently coat with HoneyLemon mixture. Heat a skillet on med/low heat with a 1-1&1/2tsp coconut oil and sauté pear until tender. Transfer onto prepared Ricotta CampingToast & enjoy!
