LondonFog Overnight Oats

LondonFog Overnight Oats…just spreadin’ tea love! It’s no secret that I’m a loose leaf tea hoarder. Every time someone opens ‘the tea’ cupboard door, a tin flies out – sorry about that. So, what better way to rotate my stash (keeping things fresh) than fitting some of my tea faves into some food faves.

LondonFog Overnight Oats

1&1/2cups unsweetened organic almond milk
1cup gluten-free rolled oats
1/2tsp pure vanilla extract
1/2-1tbsp raw honey – depending on how sweet you like it
1scoop earl grey loose leaf tea (use an infuser) or 1 tea bag *in this recipe I used Organic Cream of Earl Grey by DavidsTea
pinch of nutmeg
fresh starfruit, sliced
natural honey greek yogurt *side dish

The night before…in a pot, add the almond milk, honey, and vanilla & bring to boil over low heat. Stir. Once at a boil, remove from heat and add the tea bag. Steep for 3-4mins then ring out & remove the tea bag. Allow the almond milk mixture to cool. In a bowl, add the gluten-free oats and pour the cooled almond milk over the oats. Stir until well combined. Cover the bowl with plastic wrap, or pour the mixture into an airtight container, and place in the fridge over night. In the morning, stir and add your choice of topping. Enjoy!
