AND some days just call for a childhood favourite…Organic PuffedWheat Squares. Nothing like a much needed break (& snack) to get things going strong again – packing away the summer toys & garden goodies. The healthy-ish sugars accompanied by the more healthier addition of goji berries, pepitas, and flaxseed seem to do the trick. I also made them JUMBO.

A childhood classic made organic! The inclusion of dried goji berries, raw pepitas, and ground flaxseed are to ensure a hint of healthy fats, vitamins, and flavour.
- *organic ingredients
- 8 cups puffed wheat
- 1 cup dried goji berries
- 1/2 cup raw pepitas
- 1/2 cup ground flaxseed
- 1 cup brown rice syrup
- 1/4 cup coconut oil, melted
- 1/2 cup cacao powder
- 1/2 tsp pure vanilla
- 1/4 tsp sea salt

Prepare a 9x9 baking sheet with parchment paper and set aside.

In a large bowl, add the puffed wheat, goji berries, pepitas, and ground flaxseed. Stir. Set aside.

In a small pot over med./low heat, bring the brown rice syrup to a gentle boil. Continue boiling without stirring for about 2mins, or until syrup like (235*F soft-ball stage; drip into cold water). Remove from heat. Add the coconut oil, cacao powder, vanilla, and sea salt. Stir well.

Pour the cacao syrup mixture over the puffed wheat mixture. Fold until evenly coated. *Fold somewhat quickly as once the syrup begins to cool, things will stiffen up.

Pour the coated puffed wheat into the prepared baking sheet. Dampen your hands with a little water and pat firmly down on the puffed wheat evening it out as you go.

Place in the fridge to set for at least 2hrs.

Pull up by the parchment paper, place onto a cutting board, and cut into desired size pieces. Enjoy.
~ I keep my puffed wheat squares refrigerated. They stay fresh and also get really chewy - just the way I like them.
