RedVelvet Raw-ly Bars

Happy International Women’s Day! New Raw-ly Bar flavour – but first, I wanted to say ‘thank you’ for being a part of my foodie journey❤ It’s never been so FUN making a mess of the kitchen. I started sharing my food/adventures (2 weeks new) because I enjoy both SO much and hope others find value in my page…healthy/quick/fresh meals, some laughs, outdoor adventures, possibly motivating, etc. I’m so appreciative for ALL of you Now, I present ***RedVelvet Raw-ly Bars***. I know, right! Packed with fresh Beet Juice, raw Cashews, Chia Seeds, & raw Hazelnuts They taste AMAZING!….also majorly addictive.

RedVelvet Raw-ly Bars
1/2cup fresh beet juice (or alternative pure juice…pomegranate?)
3/4cup raw cashew butter
1/2-3/4cup coconut oil, melted (the more put in, the more ‘bar’ like…less is more fudgy texture)
4tbsp cocoa powder
1/2tsp pure vanilla extract
1/2tsp sea salt
20 pitted Medjool dates (softer dates will also make it a more fudgy bar)
1-1&1/2tbsp arrowroot powder
*Combine above ingredients into a food processor/blender and blend until smooth. Use a spatula to scrape out bar mixture into a bowl. Add to the bowl *3tbsp chia seeds & 1/2cup raw hazelnuts, lightly chopped. Stir until combined. Line a 9″x5″ loaf pan with parchment paper. Drop bar mixture into prepared loaf pan. Press down with damp hands and/or spatula. Place in freeze to set. Once set, lift from loaf pan & peel down parchment. Cut into desired pieces. *Stores best in the freezer.
