Lunchtime! I actually whipped this yummy veggie packed plate together in 10/15mins – works perfect for me. Yam spirals on a bed of fresh Organic Spinach with Roasted Grape Tomatoes topped off with Garlicky Cashew Cream (pre-made)✨ Filled me up without weighing me down. Anyone else have a tasty lunch today??
1 large yam peeled, spiralled, & par-boiled…didn’t cook all the way through (about 7-10mins) as it will continue cooking once drained & plated.
1 handful of fresh organic baby spinach.
A handful of grape tomatoes tossed in grape seed oil & roasted in the oven at 350*F for about 8mins.
Garlicky Cashew Cream
1cup raw cashews – soak in 1cup water for at least 2hrs
1-3 garlic cloves
1-1&1/2tbsp fresh lemon juice
3/4-1tsp sea salt
*Once cashews have soaked, drain out about 1/3cup of the water and add the remaining ingredients. Use a hand blender/bullet/standing blender to whip. Add any additional ingredients as per desired flavour.
