the SmartCookie

Here’s the thing…TrailMix – and then there’s ‘sharing’ TrailMix. All those sweet/salty/raw-ish goodies in one place. A lot of fun, right! Until the bag comes back around and all of the dark chocolate m&m’s are suddenly MIA. The way I like to eat TrailMix…one of those, with one of these, and that too – it’s a total package kind of deal. Well, I won’t point any fingers but here’s my solution…the SmartCookie✨ One handed, all-in-one, deliciousness that will keep your energy topped up & also give your jaw a good workout – super CHEWY👌 How do you eat your TrailMix?? Seeds first; nut & raisin combo; maybe you’re the m&m’s picker?!

1&1/2cup sliced blanched almonds
1cup raw pepitas
1/2cup raw sunflower seeds
1/2cup hemp hearts
1/4cup flaxseeds
1/4cup chia seeds
*combine in bowl & stir.
1&1/2tbsp pure maple syrup
1/2cup brown rice syrup
1/3cup almond butter
1tbsp coconut oil, melted
1tsp pure vanilla extract
1/2tsp sea salt *combine in separate bowl from seed mix. Stir well. Add the liquid mixture to the seed mixture and gently fold until well combined. *I spilt the combined mixture in half and added @pranabioOrganic 70% Dark Chocolate Pieces & Dried Organic Goji Berries to one half; and Dried Organic Apricots to the other. The Dried Goji Berries will lose their vibrant colour when baked so I added a few on top once removed from the oven.

Preheat oven to 350*F. Prepare baking sheet with parchment paper. Roll about 1/4cup of the combined mixture into a ball, place on parchment paper, and flatten slightly (about 1&1/2cm thick). Wetting your hands when rolling prevents sticking to the hands. Bake for 15-18mins; edges begin to brown. If the cookie spreads out a little, once out of the oven, you can form it back into a solid shape (apricot cookie did this; chocolate pieces/goji berry cookie was 🙌). Remove from oven & allow to completely cool. Makes about 16 cookies.
