VeggieButter – 5Ways & Counting…

VeggieButter option#1…as a spread✨ This pita packed with fresh veggies, ricotta, and VeggieButter was absolutely delicious. AND a total handful! This was lunch after I had a crew over to help with some outdoor chores – the reviews, “seconds please!”.

*RicottaCheese spread…1/2cup ricotta with a squeeze of fresh lemon juice, and a pick of sea salt & pepper. Use a handheld blender to whip it up until light&fluffy. Store in an airtight container in the fridge. Veggies…baby arugula, avocado, red onion, red/yellow bell peppers, cucumber, and alfalfa sprouts.

VeggieButter option#2…on pasta✨ Like they say, stock up on those healthy carbs the day before a BIG run, hike, row – you name it! This flavourful pasta dish will send your energy level well on its way for all your adventure needs. I loved it on @gogoquinoa corkscrew pasta that had the job of holding all that creamy/veggie goodness…AND because it’s organic/vegan/gluten free, digestion should be a breeze.

*I used 1cup of the VeggieButter plus 1/2cup more CashewCream to add a lil’ extra creaminess (see VeggieButter/CashewCream recipe link in profile). Also, the fresh green onions, lemon zest, and sea salt pepitas added a nice balance to all the flavour.

VeggieButter option#3…as a dip✨ I’ve said it before – what better compliments veggies, but more veggies😊 I always like to have a ‘fresh’ element with my meals so when it comes to a platter of fresh vegetables, I’m all over it. I like to make the rounds so no veg is left out. How about you??…are you a ‘carrot first’ person; or possibly a ‘celery only’ dipper?! I have a ‘fistful of veggies’ plunger in my family that gets the job done quite efficiently in one go – always have extra dip on hand when that one is around!

VeggieButter option#4…on AvocadoToast – the stuff is everywhere so it got a category all its own✨ You won’t find ‘everything but the bagel’ seasoning here (although, super tempted to create a “sprinkle” of my own🤔)! Just a solid helping of VeggieButter, avocado, alfalfa sprouts, fried egg, CashewCream, & lemon zest piled onto my fave, CampingToast. This was another one that disappeared like lightening after our mini photo-op.

VeggieButter option#5 (best digit ever!)…in soup✨ I added about 1/2-3/4cup to my veggie broth & it instantly turned my soup into something that tasted like it had been simmering for hours – SO good! AND good for you. I’m not a huge vegetable soup fan mostly because the veggies are way overcooked by the second helping (sometimes the first…sorry, moe moe😅) so the option to add veggies via broth works great for me. Also, I loove noodles in my soup so no surprise that they made it into this ‘option’ – RiceQuinoa. To top things off, I added chopped Rainbow CherryTomatoes, FreshBasil, & GoatCheese for one; CoconutMilk for the other. Made for one tasty/healthy/hearty meal.
